Hm, the dictionary makes it look like it's stressed on the penultimate syllable in singular (like Polish pałac) but I never hear people say it that way?

Interestingly enough, the ones that speak a Polish Yiddish will be the ones to say פאלא'ץ, but the Lithuanian and Belorussian Yiddish dialects will generally tend to say פא'לאץ. It really depends on how consistent you want to be with your personal dialect, otherwise-both are valid in practical use.
